> Meat Dishes - Side of Beef in Fleurie

Recipe pour 4 personnes.
Ingredients
A 1.2Kg side of beef
on the bone
Butter
4 échalotes
grises
30 cl of Fleurie
1 big knob of meat
stock
Slices of poached
beef marrow.
Recipe
Cook the side of beef in a copper sauté pan, leave to rest for 15 min.
In the sauté pan, soften the chopped shallots. Deglaze with the 30cl of Fleurie. Add a big
knob of meat stock. Leave this to reduce to half and then whisk in 120g of butter.
Put the side of beef back in the pan and coat with the Fleurie sauce, to which you have added the
slices of poached marrow.
