> Meat Dishes - Coq au Beaujolais

Ingredients
1 chicken cut into
pieces
1 bottle of Beaujolais
Thick slices of bacon
cut into cubes
Small onions
Mushrooms
1 bouquet garni
1 clove of garlic
Flour
Croutons
Salt, pepper.
Recipe
Rissole the pieces of chicken in butter with a little crushed garlic. Dust with flour, cook in
the oven for a few minutes, pour the Beaujolais over this, flambé and add the bouquet garni
and seasoning.
Cover the pan and cook it according to the weight and age of the bird.
Prepare the garnish of small onions, bacon cubes and mushrooms sautéed in butter.
Take out the pieces of chicken, reduce the juices, season to taste and thicken with a little blood.
Pour this sauce with the garnish over the chicken. Leave to simmer for quarter of an hour and serve
with a few croutons.
