Ingredients
Garlic
Mushrooms
Tomatoes
30g of onions
2 dessertspoons of
cream
30g of shallots
350g of poultry liver
4 eggs
1l of milk
200g of breadcrumbs
2 teaspoons of chopped
parsley
Salt, pepper
Recipe
Soak the breadcrumbs in milk.
Chop the poultry liver finely. Mix the chopped liver with the eggs, cream, chopped onion and parsley.
Season with salt and pepper.
Take the breadcrumbs out of the milk and drain them. Blend the breadcrumbs with the mixture of
other ingredients. Add in the milk. Cook in a bain marie for 25 minutes at 150°C.
Tomato sauce :
Cook the pealed tomatoes with chopped onions and the whole cloves of garlic, which have been sautéed
in olive oil beforehand. Season and leave to cook.
Push it through a fine sieve before serving with the poultry liver cake.
