> Meat Dishes - Lucienne's tripe
 
Ingredients

Mixed tripe
Onions
Pepper, salt
Nutmeg
1 dash of white wine
Vinegar, chopped parsley.


Recipe

Slice the mixed tripe finely. Sweat the onions in a frying pan, using good lard.
When the onions are softened put the tripe into the pan and season with salt and pepper.
Stir well and cover the pan to braise and sweat the ingredients.
Then sauté the tripe until it is golden; add a pinch of nutmeg and a dash of good white wine and, just before serving a dribble of vinegar and the parsley.
