> Vegetable Dishes - Fried French beans, Lyon style

An old recipe.
Ingredients
French beans
Butter
1 or 2 onions
A dash of vinegar
Chopped parsley.
Recipe
Before putting the French beans in the hot butter in the frying pan, put in the onions cut finely
in half rounds. Sweat them gently, then add the French beans and fry everything together. Check
the seasoning.
Arrange the French beans and onions in a deep serving dish. Put the frying pan back onto the heat
and when it is hot take it off the heat and put in a dash of vinegar straight away. Pour the hot
vinegar over the French beans and sprinkle with chopped parsley. Serve.
