> Desserts - Hot and cold pears in Brouilly

Ingredients
4 pears
1/2 a stick of cinnamon
1 bottle of Brouilly
Butter
Vanilla ice-cream
(1 scoop per plate)
2 cloves
5 chicks of orange
per plate
Recipe
Peal the pears and cur them in four cook them in the Brouilly with the cloves, cinnamon and sugar.
Take out the pears, reduce the sauce by half then thicken with the butter.
Present on plates in a star shape with the vanilla ice cream in the middle and pour over the sauce.
Decorate with orange and candied peel.

Brouilly, Beaujolais Cru
This is the most southern of the Beaujolais Crus. As it is powerful and fruity it is very suited
to the pear and cinnamon aromas.
