> Fish dishes - Burbot with velvety leeks
 
Recipe from the "Le Vieux Moulin" Restaurant in Alix.

Serves 4.

Preparation time: 20 min.
Cooking time: approx. 15 min.

Ingredients

1kg of burbot
2 leeks
1/2l of single cream
1 teaspoon of curry powder
Salt, pepper
Fish stock
Chervil.

Recipe

Carefully remove the central bone and cut the fish into 8 slices, season them with salt and pepper.
Half fill a steamer with water and bring to the boil.
Put the slices of burbot in the upper part, cover and leave to cook for 5 minutes.
Put to one side until the sauce has been made.

La sauce :
Cut the washed leaks into julienne.
Sweat them in butter without browning them.
Add the teaspoon of curry powder.
Pour in 10cl of fish stock, reduce.
Add the cream, bring to the boil.
When the sauce has reduced season with salt and pepper.
Put the burbot slices onto hot plates.
Pour over the sauce and decorate with chervil leaves.
