Little Mediterranean Tarts

Ingredients Pizza pastry (2 rolls)
1 mozzarella
Parmesan shavings
Fresh basil
2 tablespoons of olive oil
1 onion
50 g tomato concentrate
30 g tinned tomatoes
16 cherry tomatoes
1 teaspoon sugar
Olive oil
Preparation Roll out the pastry 3 to 5mm thick and cut out circles 8cm in diameter.
Sweat the finely chopped half onion in the olive oil, add the tomato concentrate and the tinned tomatoes, sugar and salt. Cook for 10 minutes then allow to cool.
Spread a little tomato sauce on each pastry circle, add pieces of mozzarella and some parmesan shavings. Top with basil leaves and 2 or 3 cherry tomatoes.
Place on greaseproof paper and cook in the oven for 12 minutes at 180°c.
