Spring Mini Rolls

Preparation: 50 mins
Ingredients 400 g flour
80 g butter
15 cl water
Fresh basil leaves
1 pot of mascarpone
12 slices of smoked salmon
Salt and pepper
Preparation Stir the flour with a teaspoon of salt. Finely chop the basil. Mix together butter, flour and basil with your fingertips, adding a little water as required to form a dough. Divide into 12 balls and leave in a cool place for 30 minutes.
Roll out each ball of pastry into thin plate sized rounds. Cook for 1 minute each side in a very hot frying pan, with no addition of oil. Leave to cool.
Beat the mascarpone with the salt and pepper, spread a thick layer over each pastry piece and top with one or two slices of smoked salmon. Form a roll, cut into small slices and fix with a cocktail stick. Serve cold.
