Courgette flan
Easy Rosé- Beaujolais

Need something refreshing? Here's the perfect duo for summer: courgette flan and Beaujolais rosé.
Ingredients
- Serves 4
- 6 courgettes
- 2 garlic cloves
- 5 eggs
- 250ml milk
- 500ml tomata sauce
- Olive oil
- Knob of butter
- Herbes de Provence
- Salt/Pepper
Preparation
- Step 1Preheat oven to 180°C.
- Step 2Wash the courgettes and cut into fine slices without peeling them.
- Step 3Peel the garlic cloves then cut them into small pieces.
- Step 4Brown the courgettes in a frying pan with a drizzle of olive oil, add the garlic and season with salt.
- Step 5Beat the eggs in a mixing bowl. Pour in the milk and stir until smooth. Season. Then add the courgettes.
- Step 6Pour the mixture into a greased mould, then cook in the oven for 30 to 40 minutes.
- Step 7Meanwhile, heat the tomato sauce, add the Herbes de Provence and season to taste.
- Step 8Serve the flan with the tomato sauce. You can serve the flan warm or cold, whichever you prefer!
- Step 9Tip: Use a food processor to cut the courgettes for even finer slices.
