Not familiar with this italian version of the omelette? Let's try this easy ant totally spring recipe, to be matched with a cuvée of Fleurie.

Ingredients

  • 350g peas
  • 1 garlic clove
  • 1 spring onion
  • 4 eggs
  • Around 10 mint leaves
  • 1 mozzarella
  • Olive oil
  • Salt/Pepper

Preparation

  • Step 1Preheat the oven to 200°C
  • Step 2Plunge the peas into a pan of boiling water for 7 minutes, then drain
  • Step 3Chop the garlic into small pieces and slice the spring onion
  • Step 4Heat a drizzle of olive oil in an ovenproof frying pan. Soften the garlic for a few minutes
  • Step 5Meanwhile, beat the eggs in a bowl and season. Wash and chop the mint leaves, then add to the mixture. Pour into the frying pan
  • Step 6Scatter the peas over the mixture. Cut the mozzarella into cubes and place on top
  • Step 7Leave to cook for around 10 minutes, then cover and continue cooking for a few more minutes
  • Step 8When the frittata is almost cooked through, put it in the oven for 5 minutes until golden
  • Step 9Garnish with the spring onion before serving
  • Step 10Can be eaten hot or cold!
